The AeroPress, Explained
There’s a reason the AeroPress has built a following around the world. It’s simple. It’s compact. And when used well, it makes a cup that’s clean, balanced, and full of flavor. But more than anything, it makes people curious.
At Goldchild, we use the AeroPress in our tastings and events because it brings people closer to the coffee. It slows things down, creates conversation, and helps people understand what they’re tasting.
And with our co-founder, Jeff Rambo, 2025 U.S. AeroPress Champion, leading that exploration, it’s something we care about doing right.
What Makes the AeroPress Different
The AeroPress is a mix of immersion and pressure brewing.
In simple terms:

it has a little more body than pour over

more clarity than something like a French press

and a lot of control over how your coffee turns out
It’s easy to start with, but there’s a lot you can learn from it over time.

Where to Start
This is the exact framework Jeff used on stage in San Francisco for the 2025 U.S. AeroPress Championship. We’re sharing it so you can try it at home.
You can use any coffee you like.
The one listed below is what Jeff used in competition, but the method is flexible—built to be adjusted and refined based on what you’re brewing and how you like it.
The Coffee

Setup

Position: Inverted
-
Coffee: 15g
-
Grind: Medium-fine (around 24 clicks on a Comandante)

Filters: 2 paper filters (rinsed)
Water:
-
Lotus Water, 195°F / 90.5°C, ≈114 ppm TDS (balanced mineral composition emphasizing magnesium > calcium)
Recipe
-
Brew water: 180g
-
Bypass water: 30g (in your cup or server)
Step by Step
1. Prep
Add 30g of hot water to your cup.
Rinse your filters and attach them to the AeroPress.
2. Add coffee
Grind 15g of coffee and add it to the AeroPress (inverted).
3. First pour (0:00)
Start your timer.
Pour 50g of water and stir to make sure all the coffee is wet.
Let it sit until 0:30.
4. Second pour (0:30)
Add 130g of water (total 180g).
5. Flip (1:20–1:30)
Attach the cap, flip onto your cup (with the 30g water already in it).
6. Press
Press slowly and steadily for about a minute.
7. Aerate
Pour the coffee back and forth between two cups a several times to open up the flavor and serve.

The extra water in the cup (bypass) smooths things out, and the slower press keeps the extraction even.
